Passover is starting soon, and I just wanted to wish everyone a happy one.
I also have some great recipies for Matza Balls, Passover Buns and Passover Bagels. Yes, you can eat something resembaling a sandwich during Passover. If any wants the recipies just let me know (you can PM me if would make you more comfortable) and I will give you the recipies!

Passover is the story of the Jewish peoples exodus from Egypt. When we were finally granted our freedom, after the 10 plagues, and for the second time, we ran. We left in such a hurry that our bread didn't have time to rise. So during passover we eat nothing with yeast, corn or anything else that has a rising agent in it.
Everything is made with matza, which is made from special flour and water ( the same ingredients as in glue! lol) We use matza meal (they are simillar to bread crumbs) lots of eggs (they help to make buns bagels and cakes rise) and lots of veg. oil.
The difference between normal bagels and passover ones is that the passover ones are much drier, less tasty, very dense and feel like a cannon ball in your stomache! Thank goodness it only lasts 8 days! ( by day 4 everything tasted like cardboard and you have wicked craving for anything bread and pasta related, hell Mc Donalds seems like gourmet food by day 6! hehehe)
If you still want the recipies ( I make the buns and bagels, but you couldn't pay me to eat them!) I'd be more than happy to give them to you. Actually, I have some time to post tomorrow, I'll just post them then!

Passover recipies. I had all of theese centered, but I couldn't get it to work when I posted, sorry....
the matza balls are a secret family recipie, so Shhhhh
Matza Balls you can cut with a spoon
1 cup matza meal
half cup ginger ale
quarter cup veg. oil
half tsp. salt
4 eggs
1) mix ingredients and let stand covered in the fridge for min. 30 mins. (45-1 hour is better)
2) Keeping hands wet with COLD water roll into balls and drop into a LARGE pot of salted boiling water.
3) cover and turn heat down to med. (soft rolling boil) for 25 mins.
Makes 12 ( I only get 9 or 10) DO NOT DOUBLE!!!
the following 2 recipies can be found in the Second Helpings, Please! cookbook. I recommend using an electric mixer with the dough attacments (corkscrew). It is to hard to do by hand and regular mixing utensils just get gummed up.
Passover Rolls
2 cups matza meal
1 tsp salt
1 tsp. sugar
1 cup water
half cup veg. oil
4 eggs
Combine matza meal, salt and sugar. Bring the oil and water to a boil. Add to matza meal mixture. Beat in the eggs one at a time ( I crack them each into a seperate bowl, one at a time, it is easier to remove the shells this way). Let the mixture stand for 15 mins. Oil hand; then shape into rolls. Place on a well greased cookie sheet. Bake at 400 for 50-60 mins.
Yeild 1 dozen
Passover Bagels.
half cup veg. oil
2 cups water

quater tsp salt
1-2 tbsp sugar ( I use 2)
5 eggs
Boil oil and water together. Add matza meal, sugar and salt. Remove from heat. Stir until the liquid is absorbed. Cover and let stand untill cool. Add eggs one at a time. Beat untill light and fluffy. Drop from spoon onto lightly greased cookie sheet.Make a hole in the center of each one ( I oil my hands, to make it easier) Bake at 400 until lightly brown, about 50-60 mins.

Well at sun down Passover is over. Please say a prayer for us, we are having a house full of people and kids for a Passover party.
And when it is over we are orderinf Pizza and Garlic bread!!! ( maybe some subs, burgers, pasta......... Can you tell I want anything bread related??? (lol)
