Chicken cutlet recipe

Hi Ladies
These are so easy to make and I'm sure all the GGs know how to make them. You can use veal,turkey or chicken cutlets. I like the thin sliced myself.
I always wash them in cold water and cut off any fat or tendon. I have one deep dish with 2 raw eggs beaten and another with bread crumbs. I like the Four C seasoned or Progresso Italian bread crumbs. Coat them in the egg and coat them with the bread crumbs.
Then I use a frying pan with 3 inch sides and put about 1/2 inch of Canola oil and heat it. Make sure it's hot before you put the chicken in so it sears the outside. It should crackle when you put in the first one. I put in three or four pieces in because if you crowd the pan the temperature of the oil drops and they will get soggy. Just leave each side in until golden brown and put them on a plate with layered paper towels to absorb any excess oil.
I let them cool and you can pop them in the fridge and use them all week in a sandwich or salad or put them some pasta sauce with cheese and bake them like Tink did tonight! Oh those artists! They're always thinking out of the box! It really is fast and simple. If I can do it even George W Bush will be able to do it. We both were on the same short bus in grammar school. I was upset when George scored higher on our combined SAT scores by 2 points. I thought my 234 was unbeatable. Have a great night ladies!

Seriously, though, we're looking forward to that wonderful meal and the wine is already chilled.

ha, Virginia. Yes if Jeannie provided the secret recipe, I think we all have to cook now. If it weren't for Jeannies care packages I probably wouldn't remember to eat. The cutlets keep GREAT and freeze well, too. I don't micro wave them though. that doesn't give the full crispy effect. I put them in the oven to heat. they are SOOOO delish. ENJOY~ hugs~ tink

I've finished eating the chicken cutlets today - not only are they delicious for dinner, they make a great breakfast, too! Well, unlike some people I don't care for cold pizza for breakfast.

Alright, Ms Cooking Goddess, now where is the recipe for that fantastic pasta sauce you sent us? I love my own sauce, but yours was wonderful! Have you ever tried substituting Extra Virgin Olive Oil (cold-pressed, of course) for the Canola Oil in your Cutlet Recipe?

Hey Lisa. I sent some chicken cutlets to Milton in Vermont. Start calling some Miltons Hon! He has your stuff! I'm cleaning the fridge because it was full of water today. The drain in the freezer that lets then excess moisture run down a tube into the drip pan under the fridge was clogged. I had to throw out a bunch of food but I did find a capicola sandwich I made two years ago. It tasted pretty good. Ill post a couple of pictures. Marley is getting good at taking them even though he doesn't have any thumbs.
I have to run. I'm watching CNN and they just interupted a Presidential news conference on Iraq! Yea! Britney Spears is going back to rehab(Again!) and they have a picture of her getting out of her SUV with no panties on! Now that's news! Nothing better than a cheap thrill! Hi ladies
I make jokes about Anna Nicole and Britney but it's really awful the non stop press they receive. Britney is young woman and needs some help. Anna was 39 year old woman who dropped dead,has a 5 month year old baby girl and her 20 year old son died last year. Give her a break!
All the press does is show sexy pictures of Anna and talk about her drug problem and those cockroaches come out of the woodwork to claim the baby for money. It's disgusting. There's no respect for the living or the dead today. Imagine how we would feel if Anna were our sister or mother or Britney were our daughter. These shouldn't be national headlines but private matters. There is no off limits today with journalism and I use the word loosely. I feel bad for both of them and their families. Hugs. Gotta go look for a roof leak.

PS. I took down the water damaged ceiling tiles and jumped in the shower. The shower head starts squirting all over the place. I'm upstairs on a plumbing break to put on a new shower head! What the freak is next! It's that Mini with her little Jeannie VooDoo doll again! The Warden never sleeps! I've been digging a tunnel in my cell with my emory board to break out and I'm almost finished. I have a poster of Rupaul covering it when Mini comes around for cell check. Wish me luck ladies!
